Week 10
Well, I am now in the eleventh week of my challenge.
I am proud to say that I am still eating well and have not yet given into any junk.
To make my weekly column a little more interesting, there will be a challenge that readers can participate in starting next week.
The prizes for this challenge will be various items donated from businesses around town.
So please keep your eyes pealed for upcoming goodies you can win throughout the year.
In an effort to encourage others to eat healthy, my Nutritionist, Natalie Buffa has allowed me to publish some recipes she has given me in this column.
Here is one for this week:
Meatball Egg Bake
A mouth watering combination of mince, egg and vegetables baked to perfection
Coconut oil for greasing
250g lean beef or pork mince
1 large sweet potato
3 green onions, finely chopped
4 eggs, beaten and seasoned with salt and white pepper
Preheat your oven to 190° and grease a small baking dish. Grate the sweet potato and place aside.
Pinch off small amounts of mince which resemble rough meatballs and toss into a hot frying pan with a little melted coconut oil.
Cook until just brown, trying to retain the shape of the meat. Add the sweet potato, green onions and egg mixture and stir. Pour into the baking dish and bake for 45 minutes.
Leave to cool slightly before slicing to serve.
Serves 4.
