The scone can be daunting too.
You can either make them or you can’t, show cooking judge Heather Dingle said.
If you have decided to enter into the 2018 Katherine Show’s cooking competition, rest assured.
Patty Buntine, a long standing patron of the Katherine Show and Heather Dingle, who oversees the CWA in Katherine are hosting a sponge and scone workshop this Sunday at 2pm.
The workshop will take bakers through the steps of creating the perfect light and fluffy recipes.
“After judging for the past three years I have found that some people just need a little bit of fine tuning,” Ms Dingle said.
“Most people are pretty good bakers already, and there are some people who have wanted to enter the competition but just need a confidence boost.”
This workshop is perfect for those who need to brush up on their previous entries and for those who are taking the plunge for the first time.
Long standing cooking competitors Fay Cox and Jill Hagger have tossed in their well deserved crowns making way for a new Katherine winner.
“Fay and I challenged each other on the sponge for many years. I said I would stop when she beat me and she finally did,” Mrs Hagger said.
“I haven’t entered since, it will be nice to have someone else win,” she said.
The rivaling pair have moved onto sponsoring the Cox-Hagger competition, which will see Katherine locals in a bake off to create the best patty cake.
Mrs Hagger was happy enough to pass on a winning tip for those entering a scone or sponge this year.
“My mother always said, a good cook has a light hand and a generous heart.
“A generous amount of good ingredients goes a long way,” she said.
The judges will be looking for a good rise and a good crumb structure in the scones.
“When you break them open they should be lovely and soft and light,” Ms Dingle said.
And the same goes for the sponge.
“We are looking for beautiful colouring and no clumps of flour.
“Then, of course, it comes down to taste,” she said.
