The team behind the popular cafe are excited for the busy months ahead despite the ongoing rejuvenation happening right next door .
With the popularity of the cafe growing every year, owners Bec Gooley and Mick Armstrong are trying to obtain approval to open through the wet season as well.
“The issue is we are in a flood zone,” Mrs Gooley said.
“But we are hoping to get around that. We are fairly mobile and can be packed up and gone within two hours.”
In addition to extended opening times, the cafe is looking at an expansion.
A new commercial kitchen is on the way, with more food choices, Mrs Gooley said.
And the cafe may soon be open at night for dinner.
Currently, the cafe serves a range of breakfast and lunch options.
And two different coffee blends freshly roasted by the only commercial roaster in Katherine, Mr Armstrong, are available.
The Pop Rocket cafe is open from 7am to 3pm everyday.
