The Katherine Country Club has won the prestigious title of Best Regional Laksa at the Territory's annual Laksa Festival.

The Country Club took home the gong, beating a number of restaurants from Alice Springs, Tennant Creek and Nhulunbuy in a blind taste test by a panel of judges.
Executive chef Emma Fitzpatrick said she and her team were "absolutely stoked" when their win was announced on Sunday.
"I was home when we heard about it and I was walking down my back paddock with my dogs and watching the livestream and I'm pretty sure like I scared my neighbours with how loud and happy I was," Ms Fitzpatrick said.
"I called my sous chef straight away at work and I'm pretty sure he yelled the restaurant down. So we're all we're really really happy."

Ms Fitzpatrick said there was a lot of trial and error to perfect their laksa.
"We did obviously have a few mishaps where we didn't quite get it right. And we came back to the drawing board a few times and said, 'okay, this is where we've gone wrong. We need to fix it this way.'
"It was so much work, and we were so happy that we were able to produce such a great dish and send it to Darwin and have the judges pick ours."
The process of getting the laksa from Katherine to the judges in Darwin involved putting the entry dish on an Airnorth plane.
"They're like 'oh, so we're gonna send you an Esky. It's gonna have some ice blocks in it. We need you to put all your ingredients...in this Esky in ziploc bags and then your stock and then we need you to put instructions in there...and put it on the aeroplane.'"
"I've been cooking for 15 years and this is something I've never done in my life.
"They take laksa very seriously."
The Katherine Country Club offers three laksas - vegetarian, seafood and chicken - on both their lunch and dinner menus.
