According to NT Police, Jeremy MacDonald, 27, is believed to have left his room via the balcony on Friday.
Staff confirmed he was not in his room at 1pm.
MacDonald was directed to quarantine after entering the NT by road at Kulgera on November 26 without declaring he had been in a hotspot.
He tested negative for COVID-19 on December 1, but police are asking members of the public to look out for him.
"We urge the community to report any sightings of Jeremy MacDonald, and encourage him to hand himself in to local police," Commander Sachin Sharma said.
"The CHO directions are in place for community safety and breaking those directions is a serious offence."
Anyone with information is urged to call police on 131 444.
